Sweetgrass Seitan and an evening with Rick Springfield

Give into your cravings and still keep it vegan.   I wanted to try the Daiya slices, so I was initially thinking Reuben, but swapped the sauerkraut for some cornichons and voila Cubano.  Melty goodness.  Yum!
